It is because multiple scales are used for the grain size of sharpening stones. An Edge Pro grain 400 is comparable to a 700 grit Japanese sharpening stone. And a 1000 grain from Edge Pro can be compared to a 2700 grit Japanese stone. When you keep in mind that you can polish with tapes with an Edge Pro grain 6000 you will understand that the sharpness you can achieve is unparalleled.
