This electric sharpening machine is co-developed by the well-known knives designer Ken Onion. Every knife can be sharpened with this machine. And in addition to knives, it is also possible to sharpen sharp tools such as chisels and axes, spud hooks, scissors and even serrated knives. This machine is in fact a small professional belt-sharpening machine with a guidance system to sharpen knives in an angle of between 15 and thirty degrees. This makes the reach big enough to be able to sharpen both thin Japanese chef’s knives and a lot thicker outdoor knives. The major advantage of sharpening on a belt is that it sharpens a somewhat convex fold in your blade because of the flexibility of the belt. These are stronger than the straight ones of, for example, a sharpening stone. And moreover, a knife with a curved blade can be very well sharpened on the WorkSharp Multi Sharpener. This may be a problem on a sharpening stone.
The machine is extremely stable, something that is different sometimes with similar devices. It is also a very flexible device. Obviously the grinding belts can be changed rapidly which is important because the entire sharpening process requires sharpening with different belts. Another point that makes this machine distinctive is the guidance system. This can be used to set the sharpening angle. Because of the elastic suspension you are forced to sharpen with little force. The weight of the knife should actually be enough. The turnable roller (edge (guide) that supports the knife helps with the guidance. Would you prefer to work without it (for example because a thumb support or pocket clip is in the way) it can be easily turned away.
The guidance unit can be quickly removed in order to, for example, sharpen an axe or if you prefer sharpening off the hand. The head with grinding belt can be turned so you can easily reach a horizontally placed axe with the grinding belt. Also, the speed of the belt can be infinitely adjusted and the machine can be permanently switched on with a blocking. You always work in the way you prefer the most.
The sharpening machine is delivered including a set of five grinding belts. The grit size ranges from extremely coarse (approximately 120) to very fine (approximately 6000). These grinding belts are actually identical to the belts Ken Onion uses on his full-size sharpening machine. The grits of the belt will gradually degrade during the use so new grits will appear again. That means you are practically always sharpening on a fresh belt. This process continues until the carrier of the belt becomes visible. If that happens the belt has to be replaced. In practice this will take longer than you may expect.
